Not only peppered or spaghetti with seafood, or even rice. The mussels are also the protagonists of an omelette. With this recipe you can offer your guests a different second dish  that respects the territoriality.

Ingredients (for 4 people):

6 eggs
800 g mussels
200 grams of bread crumbs
1 shallot
1 cup of milk
Oil, salt and pepper

Making of recipe.

Wash mussels and freeing them from each strand and place in a pan, making open fire. Shell the clams open, keeping someone in their shells, and filter, replacing it on the stove cooking liquid . Combine the shallot, finely chopped, browned in a pan with a little earlier in the oil, and after a few minutes , also add all the mussels, shelled or not, cook for 5’. Beat the eggs with salt and a little ‘pepper joining, then the breadcrumbs squeezed because wet earlier in the milk. Add to the mixture also the compound with the mussels and dried to prepare the omelette cooking it from both sides .
