Making of recipe.

Beat the eggs with a pinch of salt and just soak up the mozzarella, then push lightly on the bread so that it does not fall off (the presence of the egg on one side will be the glue ).
Then immerse the “sandwich” completely into the egg, covering it, and fry in deep oil, at room temperature ( dip it in the oil initially making sure that the side with the mozzarella is below ).
Pass the sauce on kitchen paper and then arrange on a serving plate. Add salt and pepper. This dish, like all fried foods, must be eaten at once, piping hot.
