A dish that makes gentlemen. Spaghetti ” puveriello “

Spaghetti alla puveriello

A poor dish, very poor indeed , the old kitchen of the popular Naples that feeds on simple flavors and intense those of  who had at his disposal only an egg, noodles , and little else. Like all simple dishes is very tasty , very few ingredients but success is assured. Already the smell emanating while stirring the spaghetti in the pan with all the ingredients is very inviting. Even the ” puveriello ” feels a  “sir” when seating at his table …!

Ingredients for 4 people: 320 g spaghetti , 4 eggs , 2 tablespoons of extra virgin olive oil , 1 teaspoon of lard , salt, pepper , 4 tablespoons of grated Parmesan cheese .

Making of recipe.

Cook the spaghetti in plenty of boiling salted water.

Meanwhile, in a large skillet , melt the lard with the oil. Pour the eggs, laying them without breaking them , making harden the albumen and yolk keeping the half-hard .  Lift the dough with a fork and pour the water on the eggs. Stir everything thoroughly, in sharp focus , breaking the yolk , and  mixing with parmesan cheese and pepper.
